The non-indulging indulgence: healthy hot chocolate
In the year that I spent developing recipes for #juiceculturenj, my biggest frustration was trying to create a vegan hot chocolate without refined sugar that actually tasted rich and satisfying. I couldn’t do it and we opened without one on the menu.
Turns out the missing ingredient was our brilliant and creative team, who came up with the idea of creating a thick chocolate sauce first, sweetened only with dates, and then adding that rich sauce to our house-made almond milk.
They nailed it.
Of course, the primary ingredient in our hot chocolate is cacao powder, basically unsweetened chocolate. Cacao is incredibly high in flavonoids, a powerful antioxidant. Says the Harvard Gazette, "Cocoa flavanols appear to be very promising for reducing the risk of cardiovascular disease and memory loss, cognitive decline." Another study showed a relationship between eating cacao and being less likely to die of cardiovascular disease, or even prematurely from any other cause.
Delicious and nutritious ... plants continue to amaze me.
